Cabbage with peas and carrot red soup

Flavorful red cabbage soup, low in calories and perfect for a cozy meal.

Ingredients

  • 2 cups shredded cabbage
  • 1 tbsp butter
  • ½ cup diced carrot
  • ½ cup peas (fresh or frozen)
  • ½ cup diced onion
  • ¼ cup tomato paste
  • ¼ cup chopped fresh parsley
  • 1 small lemon 
  • 1 tsp paprika
  • For liquid add water to just cover the vegetables”about 4-6 cups”  (you can use vegetable broth or chicken broth for richer flavor)
  • Salt and pepper to taste

Instructions :

  1. Melt butter over a medium heat .

  2. Add the diced onion with parsley and cook until softened, about 5 minutes with tomato paste  and spices .

  3. Add carrot, peas and cabbage 

  4. cook for 3 minutes

  5. Add water (or broth) and lemon .

  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the cabbage is tender
