INGREDIENTS:
- 1 head of cauliflower (about 450 gram ), cut into florets
- ½ cup packed fresh parsley
- ¼ cup tahini
- 2-3 tablespoons lemon juice (start with 2 and add more to taste)
- 2-4 tablespoons water (or more, to desired consistency)
- Salt and pepper to taste
- Optional: 1 clove garlic, minced
INSTRUCTIONS:
1. Cook the Cauliflower: Steam or boil the cauliflower florets until tender, about 15-20 minutes. You can also roast the cauliflower for a slightly different flavor profile (roast at 400°F/200°C for about 20-25 minutes). Let the cauliflower cool slightly
2.Combine Ingredients: In a food processor, combine the cooked cauliflower, parsley, tahini, lemon juice, garlic (if using), salt, and pepper
3.Blend: Process until smooth and creamy. Scrape down the sides of the food processor as needed
4.Adjust Consistency: With the food processor running, slowly add the water, one tablespoon at a time, until you reach your desired consistency. You want a smooth, creamy dip.
5.Taste and Adjust: Taste the dip and adjust the seasonings as needed. Add more lemon juice for tanginess, salt and pepper to taste, or more water for a smoother consistency.
