Ingredients :
- Cauliflower:
- ½ cup minced cauliflower
- 1 tbsp tomato paste
- ½ tsp paprika
- ¼ tsp cinnamon
- Pinch of clove
- Chicken:
- 1 cup shredded cooked chicken
- ½ tsp black pepper
- 1 tsp butter (optional, for warming chicken)
- Salad:
- 1 cup shredded lettuce (or mixed greens)
- Tahini Dressing:
- 1 tbsp tahini
- 1 tsp lemon juice
- 1 tsp water (or more, to desired consistency)
Instructions:
- Prepare the Cauliflower: In a small saucepan, combine the minced cauliflower, tomato paste, paprika, cinnamon, and clove. Cook over medium heat, stirring occasionally, until the cauliflower is tender-crisp (about 5-7 minutes). You want it cooked but not mushy. Add a tablespoon or two of water if the mixture becomes too dry. Set aside to cool slightly.

- Cook the Chicken (if needed): If your chicken is already cooked, you can skip this step. If it’s cold, melt the butter in a pan over medium heat. Add the shredded chicken and black pepper. Cook until the chicken is heated through, about 2-3 minutes. Set aside to cool slightly.

- Make the Tahini Dressing: In a small bowl, whisk together the tahini, lemon juice, and water. Start with 1 tsp of water and add more, a teaspoon at a time, until you reach your desired consistency. It should be pourable but not too thin.

- Assemble the Salad: In a bowl, place the shredded lettuce (or mixed greens) as a base. Arrange the cooked cauliflower on top of the lettuce. Add the cooked or shredded chicken to the salad.
- Dress and Serve: Drizzle the tahini dressing evenly over the salad. Serve immediately.
